Recipe--Sage Stuffing


Stuffing/Dressing is one of my favorite parts of Thanksgiving! We tried out this simple, old-fashioned recipe for our Thanksgiving this year, and it was definitely a hit! We didn’t actually stuff our turkey, but just served it as dressing. It was delicious and comforting.

Sage Stuffing


1 cup diced celery
1 cup diced sweet onion
1 large Granny smith apple, cut into ½-inch dice
½ cup butter
2 cups chicken broth
3 cups cubed herb stuffing mix
4 cups day old bread cubes
2 tablespoons fresh minced sage
¼ cup chopped fresh parsley
Kosher salt and freshly ground black pepper

Saute the celery, onion and apple in the butter until tender. Remove from heat and add the broth. Season with salt and pepper to taste. Add to the bread and stuffing mix along with the sage and parsley. Mix gently. If baking turkey immediately, stuff the turkey with stuffing (do not pack too tightly.) If stuffing is made a day ahead of cooking turkey, refrigerate until ready to stuff and bake the turkey. Put the remaining stuffing in a greased casserole and refrigerate—bake, covered, along with turkey the last 45 minutes of roasting time. Serves 8-12.

Different Kind of List

Every year, I try to make a Christmas list. Even if I can’t think of things I actually want, I just think of things to write down, and I tell myself it’s just so that I don’t frustrate my relatives. J Ha, okay it’s not really like that. Usually I can think of some things that I need and also write down some “wants” based on things that I enjoy or like to do.

I remember last Christmas, when for the first time I discovered how you can give through the organization, “World Vision.” That year was different for me. I made a list with a few things that I wanted, but then I added that I wanted people to help me invest in donations toward gifts from World Vision. I received some generous donations that year from people like my parents and also my Grandpa, whom I will remember this year. I was blessed by being able to give gifts like farm animals to people in countries that needed them the most.

This year, among our cherished Christmas books, I discovered a somewhat newer book that someone else in the family started last year but never finished. The title caught my attention….especially since it was part of a song that was written by the author. Can anyone guess? “Give This Christmas Away” by Matthew West. I had actually seen the book last year but didn’t read any of it until this year! In this book, the singer, or in this case, the author, gave 101 simple and thoughtful ways to “give this Christmas away.”



What does that mean--give Christmas away? To me it means a lot more than giving material gifts to others. I think it means acknowledging, by my actions, that Christmas is not about me. These simple acts in the book are ideas for acts of kindness toward others, especially because we can forget to be kind during this chaotic time of year.

Doing the simplest things in humility towards others can be really challenging even for Christians. One reason may be because sometimes, without intending to, we place ourselves in a higher position and don’t pay much attention to those whom we may consider “less spiritual” or not even “spiritual” at all. But simple acts of kindness are a good place to start. Not only that, but Jesus came to love sinners!

These ideas given by Mr. West are as simple as saying “Merry Christmas!” to a complete stranger, opening the door for another, smiling, leaving HUGE tips for the waiter at the restaurant, giving your good stuff to Goodwill, writing letters, (full length letters) and so on.

He goes on to things like sacrificing your time to help those in need (e.g. babysitting for someone) introducing yourself to a new neighbor or an old one whom you’ve avoided, forgiving others before they ask for it, inviting someone to Christmas dinner who won’t be having one otherwise, and so on.

This Christmas I am thankful for the clear opportunities that God is giving our family to bless others in many ways. We have decided that we are going to keep busy serving!!

So that is my personal challenge this year and one that I am glad to share. How will you keep yourself busy this Christmas? What if December looked different this year? What if we all just give this Christmas away?

College Plus Gathering (Saturday)


Saturday morning was sad for all of us CP students. We knew it was time to say our goodbyes! I actually slept like a log until 6 a.m. and had a harder time getting into the shower. But once we turned the lights on at 7 a.m., everyone moved quite a bit faster. Most of us packed up right away so that we could visit more later on.

But we all made it down to breakfast on time, and then over to the conference room for our last sessions. It was primarily student-led today, which was great! We would have a 7-minute talk given by a student (pre-selected to speak) and then we would have 5 minutes to discuss it in a small group (10-12 people sitting near us), elect a spokesperson, and then that person would give a one-minute feedback/summary to the entire group on our thoughts from that session. It was a great exercise!

We did that with three different talks: The Importance of Student-Led Initiative, Analyzing and Interpreting (one of my favorites!), and The Heart of the Matter. After that, we had a brief discussion on Student Forums.

Then we had a much longer session, similar to the first ones, titled “A Vision for Community.” In our small groups we answered the following questions and shared our answers with the entire group:

*Why is it important to build a CP community?
*Who is the CP community?
*What is the CP community like? What does it do?
*How do we build this community?

Then we had one final session given by Woody Robertson (one of the CP founders) titled “3, 2, 1,  . . . Launch!” Basically, it was our farewell session. L After that, we had a brief time of travel instructions. About 30 students had their flights cancelled, and those of us that had driven from north Texas knew that the roads only got worse the further north we went. Because of that, the camp—and CP staff—graciously allowed those that wanted to stay at the camp an extra night at a very reasonable cost. We were so relieved!

We had lunch with everyone, and then said goodbye to those who were still leaving for the airport. Then we students moved our things from the dorms over to the building where the parents had been staying (in motel style accommodations.) Because my Mom had already been there, I just shared a room with her.

After everyone left, those of us that were staying just sat down in the lounge and visited with each other. I started talking with a girl named A, and we sat and talked for almost two hours! We found that we had so much in common, and just had a great, deep conversation!

We all walked over to the dining hall for an early dinner. It seemed so quiet without the majority of the people there!

After dinner, we relaxed at the lodge. We hooked up someone’s computer to the projector and watched some YouTube videos together and talked. I FaceTimed with a friend while some of the others tried to play Sardines.

Then we decided to go over to the fitness center for awhile. Some people played a game of basketball, while the rest of us just chatted. Finally, we went back up to the lodge. I went up to bed while others tried to get in touch with the airlines they were supposed to be flying on.

Mom and I talked for awhile and then turned off the lights around midnight. It was so nice to be in a warm bed on such a cold and icy night!

College Plus Gathering (Friday)


Friday morning dawned bright and early at the College Plus Gathering! I had unfortunately slept quite poorly the night before (I think we all did, just because we were in a new environment.) I had only slept about 2 full hours that night. Then I was awakened by someone taking a shower at 4 a.m.! I got up around 5:30 a.m., in an effort to beat the rush for the bathroom. With about 40 girls sharing 4 bathrooms, it was almost a miracle that we all made it through!

Breakfast was at 7:30 a.m., but some of us were ready around 7:00 a.m., so we decided to walk over to the dining hall. This was the sight that greeted us! A huge tree limb actually came down on one of the guy’s cars. But thankfully, because the car was already encased in ice, the limb barely scratched it.

Breakfast was delicious, and having time to fellowship with all the other students was definitely a highlight!

After breakfast, we walked over to the building where we were having all our sessions. Because of all the ice, we linked up arms to try and keep each other from falling. J

Our first session was student orientation groups. We broke up into three groups: new students, current students, and alumni. I went with the new students, and we talked with Woody Robertson, one of the College Plus founders. It was a great time of discussion! One of my big takeaways is that CP is about so much more than earning a degree. Their purpose is to prepare us for life.

We regrouped and our second session was titled “What You Need to Know.” We covered seven areas to develop as part of our higher education. At the end of that session, a fellow student gave a presentation on Internships and Practical Experience.

We had a short break before reconvening for our third session titled “Own Your Experience.” A 16-year-old girl gave a talk on virtue, which was excellent and probably received the most “Amens” out of all the sessions. J Then her Dad spoke about making plans for our life and setting goals, but also realizing that God is in control and surrendering to His plan daily.

We had another short presentation—more like a sermon really—by one of the male students. His session was titled “What is Your Purpose?” One of my biggest takeaways came from this session. It was the phrase “The meaning of success is doing what God wants us to do and being who He wants us to be.”

After that, we broke for lunch in the dining hall. I can hardly describe the wonderful, mixed conversations that took place during meals! We talked about everything from pop culture, to CLEP tests, to dating and courtship, to our degrees and life goals, to theology. It was marvelous to be around so many like-minded students who sharpened me in so many ways!

Following lunch, we had several hours of free time. We were supposed to have some Challenge Rope courses, but due to the inclement weather, that was cancelled. They still did paintball, but only 3 guys were brave enough to actually do it! I joined the swing dancing group, and we spent our afternoon learning a dance to Mari’s Wedding, the Virginia Reel, the Postie’s Jig, and several other fun dances. It was good exercise!

After dancing for several hours, I quickly stopped back at the girl’s dorm to grab a few things and freshen up before the evening sessions started at 4 p.m. This was the view of the lake from our dorm!

We all made our way back to the conference room. The keynote speaker, John Stonestreet, was supposed to fly in and be with us in person. Unfortunately he didn’t make it due to the weather. But thankfully, he Skyped in and spoke for an hour and a half straight. All 100+ people in the room were a completely captive audience. We all could have listened to him talk a lot longer! His session was on “5 Cultural Trends You Need to Know About.” He is definitely a favorite speaker among the students, and I am very excited to take his Comparative Worldviews Course in January.

After that lecture, we broke up into our small groups to talk for a little bit. Our group decided to sit together at dinner because we didn’t want to break away from our discussion!

My small group. I love these guys like family! They are such godly young men and women, and we share so many passions and convictions. (And yes, the guy on the far left probably looks familiar to some of you. He played Dylan in the movie “Courageous!” J) I look forward to getting to know everyone in this group better!

After dinner, we had a few more sessions. The first one was “What is CP and Where are We Going?” by Woody Robertson. He gave a brief history of College Plus. I am amazed at how quickly the organization has grown and developed! He also talked about their vision for the future.

Following that session, we had a student-led session on “Mentorship and the Benefits of the Student Forums.” The mentoring is a key factor in College Plus, and I’m looking forward to being mentored, and one day mentoring others.

After this session, we again had small group time (my favorite thing about the weekend!) We talked for quite awhile, and then most of us decided to make a quick appearance at the bonfire before going to swing dance inside where it was warm. J

The bonfire was actually really warm! It felt good!

We stayed up dancing until we were kicked out of the fitness center at 11:00 p.m. J I was so sad that the retreat was almost over!

College Plus Gathering (Thursday)


This past weekend, Mom and I had the incredible opportunity of attending the 2nd ever College Plus Gathering! For those of you who don’t know, College Plus is the program I will be starting in January. Not only is it a program to help me earn my Bachelor’s degree, it is truly a program designed to help me with Life Prep.

Because their program is online, and the students primarily interact via social media, they wanted to create an environment where students could actually meet face-to-face. Since CP is headquartered in Texas, they decided to host a live conference near the DFW area. It was within just a couple of hours from us, and I knew there was no way I could pass up this opportunity!

Mom and I left Thursday afternoon, headed for the conference! Thankfully our drive was uneventful, even though the epic ice storm of 2013 was on its way.

We gave ourselves some extra time in the event of bad weather. Since we had no troubles, we had time to stop at this fun, Christian-owned coffee shop and enjoy a late lunch.
We arrived at the camp around 4:30 p.m. and stopped by the registration area. Then Mom dropped me off at the girls’ dorm. After collecting my things, she drove over to the lodge where the parents had motel-style accommodations. I met about 8 of the girls and we decided to hang out together until dinner.

We walked over to the dining hall and played a game of Triple Threat together. It was so fun, and a great way to break the ice.
Our schedule got changed around a bit because so many people arrived late due to the weather. So we went ahead and had our dinner, and started our sessions.

The first session was by Ryan Yamane, one of the co-founders of College Plus. It was  entitled “Why Are We Here?” and he took the time to answer that question as well as share his own story, and the purpose of College Plus.

After he spoke, the coordinators introduced themselves and then had an activity for us. We had to find everyone in our age group without talking, and only using one hand to gesture. It was quite amusing, but we actually did it quite quickly! Then, from our age groups, we broke up into small groups of 5 or 6 people.

I grew to truly love the people in my group! There were two other girls, one who is just like my best friend from high school, and the other who shares a passion for Haiti. One of the guys was from NJ and had a big interest in computers; another guy lives only about two hours from me, and the third played Dylan in the movie “Courageous!” In our small groups, we went around and peppered each other with questions, trying to get to know each other as quickly as possible. It was great!

Then—because we’re crazy college students. J--we went on a hay ride in the ice and snow! It was quite short, but still fun.

We still had a couple of hours until lights out. We went upstairs to the aerobics room in the fitness center, and a couple of the girls started teaching us how to swing dance. I did ballet for 8 years, but I’ve never done any other type of dance. I had a lot of fun learning with JT, one of the guys in my group. I actually learned how to successfully do the Pretzel! We also learned the Virginia Reel. Group dances are a lot of fun! Although I admit I was pretty tired by the end of it; we had so many couples, it took us about 20 minutes to go through it once!

I went to bed that night pretty tired, but quite happy. I knew right away that the retreat was going to be too short. I was already forging great friendships and enjoying every minute!

Dickens of a Christmas Party


Last Wednesday, our church had its annual Christmas party! Last year, the theme was a western hoe down. This year, they decided on a Dickens Christmas Party! The party was very different for me this year, because instead of simply attending, I was involved in the planning and execution as part of the staff (I’m an intern this semester.)

We had several things going on all at once. When people arrived, we had a Dickens photo booth which I helped run, a hot cocoa bar with all kinds of fixings (think whipped cream, sprinkles, fancy marshmallows, etc.) Christmas cookies, and hay rides.

In the middle of our evening, everyone gathered in the worship center to sing some Christmas carols! I actually missed this whole part because I was cleaning up the hot cocoa bar, but I heard it was good!

After that, people continued the activities we had beforehand. In addition to that, each family got to decorate and take home a Christmas ornament. Here, a crew gets ready to go on a hay ride.

To end the evening, we had story time with Scrooge. The kids really enjoyed it!
Being an intern, I stayed late to help clean things. The party was so much fun, and I’m so glad I had the opportunity to help out and to attend!
