Recipe--Cucumber Vinaigrette

I know that many of you are starting to pick produce from your gardens, so I thought I would share this recipe before your cucumbers come in. You can file it away and remember to try it later on. During the summer, we swim in cucumbers. We love to have cucumber sandwiches, and to eat them plain. But sometimes we like to dress them up a little bit. This dressing is excellent for cucumbers and tomatoes. And if you’re like us and have dozens of slicing cucumbers sitting on your counter, you can even arrange a nice plate of sliced cukes and take some to neighbors who don’t have a garden of their own! I’m sure they’d enjoy it!

Cucumber Vinaigrette


2 tablespoons olive oil
1 tablespoon vinegar
1 tablespoon minced fresh parsley
¼ teaspoon salt
¼ teaspoon pepper

In a small bowl whisk together ingredients. On a serving plate, arrange cucumber slices. Drizzle with the vinaigrette.
