Last Saturday I promised to share one of our favorite bread recipes: English Muffin Bread! We love how easy it is to make this bread, and how delicious it is! It tastes just like English muffins and goes wonderfully with soups, or served hot with butter! Thanks to Sarah for sharing this recipe on her blog! We love it!
English Muffin Bread
4 3/4 cups all-purpose flour divided
2 packages yeast (4 1/2 tsp.)
1 Tbsp. sugar
2 tsp. salt
1/4 tsp. baking soda
2 cups milk
1/2 cup water
Cornmeal
Combine three cups of flour and the yeast, sugar, salt, and baking soda in a mixing bowl. Heat milk and water to 120-130 degrees and then add to the flour mixture. Mix until smooth. Add remaining 1 3/4 cups of flour and mix completely.
Grease two loaf pans and dust with cornmeal. Split dough between the two pans and dust the tops of the loaves with cornmeal. Let rise for 45-60 minutes and then bake at 400 degrees for 25 minutes. Enjoy!
*Tip: I used to have a really hard time getting bread to rise because our house is usually pretty cold. A trick that works really well for me is this: turn on the oven to “warm” (170° F for our oven). Place bread pans into the oven and turn it OFF. Allow it to rise in the warm oven. This works great because it is warm and draft free!*
