Recipe--Puffy Pancakes

For as long as I can remember, our family has observed Lent despite the fact that we’re not Catholic. Mom and Dad thought it was a good reminder to us kids to give up something for a period of time in remembrance of all Jesus sacrificed to come to earth and die for us.
 
Along with celebrating Lent, we usually observe Shrove Tuesday by eating Puffy Pancakes! There’s a long story behind that tradition, but that could be an entirely different blog post. What I want to get to is the recipe!
 
We love puffy pancakes so much that we sometimes have them during the rest of the year just because. They make a very simple breakfast, and they’re quite filling. I don’t think you could find a pancake recipe easier than these! Just multiply the recipe for how many pancakes you want, and enjoy!
 
Puffy Pancakes
 

1 Tablespoon oil or butter
1 egg
¼ cup flour
¼ cup milk
Sprinkle of cinnamon
Chocolate chips
Syrup
 
Preheat oven to 425°F. Place tablespoon of oil into 9-inch metal pie pan. Put plate in oven. While oil is heating in the oven*, mix together the egg, flour, and milk in a bowl. Pour into hot pie plate and sprinkle with cinnamon. Bake for 15 minutes.
 
Immediately after removing pan from the oven, sprinkle chocolate chips over pancake. Serve with hot syrup. Enjoy! Makes 1 pancake.
 
(*Keep an eye on the oil when you’re melting it in the oven, especially if you use butter or coconut oil. It can start to smoke or burn quickly!)

  1. Mmmmmmmmmmmm, can you use a glass pie plate and how many servings are in one pancake? I'm guessing 1-2

  2. I don't see why you couldn't use a glass plate, Aunt Debbie, although I haven't personally tried it. We usually make 1 pancake per person, but that's usually all we have for breakfast along with some juice and maybe some fruit. It is pretty filling!
