Recipe--Pecan Chicken

Recently, Roma and Rubia made this chicken for dinner. It’s not too hard, it’s quick to prepare, and it’s tasty and comforting! We enjoyed it with our homegrown pecans as well. J It’s a good way to use up our abundance!

Pecan Chicken



4 boneless, skinless chicken breasts
2 Tablespoons honey
2 Tablespoons Dijon mustard
2 Tablespoons ground pecans

Place chicken between 2 sheets of heavy-duty plastic wrap; flatten to ¼-inch thickness using a rolling pin. Set aside. Mix honey and mustard together; spread over chicken. Coat chicken with pecans; arrange in a lightly greased 13”x9” baking pan. Bake at 350°F for 15-18 minutes. Makes 4 servings.
