Waiting to Be Filled

It caught my eye while I was walking.


A rusty burn barrel, well-used and worn. Hardly what I would have pegged as a noteworthy photo opportunity. Silently it stood, on its bed of brown winter grass. Waiting to be filled.

I wondered why I was drawn to it. Something about it spelled beauty. How many relics of hopes, dreams, and daily life had been stuffed inside, then set aflame? How many pounds of possessions had been reduced to charred, glowing ashes? How many flames of crimson, gold, and orange had reached toward heaven, sending out shimmering waves of warmth; crackling and popping with excitement; then dying down to a quiet sigh?

How does beauty spring from ashes? Is it in the freedom that comes from the letting go? When I willingly release all I once held dear, I am empty enough to be filled. The old is gone, the New now comes. The One who created me, and knows all the days ordained for me, can now re-create in me His plan.

And in His plan, is beauty.

“But whatever things were gain to me, those things I have counted as loss for the sake of Christ. More than that, I count all things to be loss in view of the surpassing value of knowing Christ Jesus my Lord, for whom I have suffered the loss of all things, and count them but rubbish so that I may gain Christ…” (Philippians 3:7-8)

Mom's Birthday Celebration


Earlier this month, we celebrated Mom’s birthday! Our celebration was low-key, but still fun!

We went out for a nice dinner at Red Lobster. We rarely go there, so it was a special treat.
Mom and Dad at the restaurant. We were also joined by one of our Home-Away-From-Home students, O. He was actually at home that week, but drove an hour to join us for the night!
The food was delicious! I admit to being rather shocked when mine came out; it was enough for four people! I had leftovers for days. J
After dinner, we came home and enjoyed Mom’s favorite birthday cake: Chocolate Turtle Cake! With ice cream of course. J Because that’s how our family rolls!
Then we gave Mom her cards and gifts!
We are so grateful to have Mom! She is an incredible blessing to all of us, and is truly a Proverbs 31 and Titus 2 woman. We look forward to celebrating many more birthdays with her!

Walk

This past weekend, we enjoyed a beautiful Sabbath. The temperature climbed up to about 70 for the day, which is unusual for this time of year (don’t worry, you northerners. J Justice was executed that night with ridiculous winds that ripped off large junks of our roof, followed by temperatures in the 30’s on Monday.) We simply had to take advantage of the gorgeousness by going on a walk!

I grabbed my camera to bring along. I have a very low tolerance for the chill, so I rarely go out and take pictures in the winter months. I had to get some “winter” scenes, but without the cold! J

I love this time of year (when the winter wheat starts to come up.) The greenery gets me excited for spring!

Thanks to all the cattle raisers, barbed wire is in abundance down here. I have grown to appreciate its beauty, stark as it is.

A Fun Thursday


Last Thursday, our family had a “school-on-the-road” day. Our church was having an open house for their newly-launched café. We wanted to stop by and support them. But we ended up making a day out of it!

I was grateful to be able to join the family on their fun day. I came a little late because I had a coaching call for College Plus, but I didn’t miss too much, thankfully. J

After spending some time at church, we headed over to the library for a couple of hours. Some of us worked on school while others looked at books. Then we headed home for the rest of the afternoon.

But . . . we didn’t stay long. J Our two home-away-from-home students have a light term in January, so we’ve been doing more with them before their “real” school semester kicks off in February. They thought it would be fun to go roller skating!

Skating is always a popular activity with us kids! We had lots of fun that night. We were super proud of Mom; she skated for the first time EVER! She did awesome. J
And that was our Thursday! A fun little break in our normal routine.

Recipe--Polar Express Hot Chocolate



There’s hot chocolate, and then there’s *special,* almost-qualifies-as-dessert hot chocolate. This is the latter. J This decadent version of hot chocolate is perfect to serve for company on a cold winter night.

Polar Express Hot Chocolate


6 cups milk
1 (14 ounce) can sweetened condensed milk
1 ½ cups bittersweet chocolate chips (use a quality chocolate like Ghirardelli)
1 ½ cups heavy cream
1 teaspoon vanilla extract
1/8 teaspoon salt

In a large pot combine all of the ingredients over low heat. Keep mixture over low heat for 30-40 minutes whisking occasionally until chocolate is fully melted and incorporated with the other ingredients. (You can add milk here to adjust to your chocolate preference.) Give it a good whisking before serving to get it nice and frothy. If you have an immersion blender, that works great here.

Serve immediately or pour into a crockpot and keep warm until ready to serve.

Top with whipped cream, crushed candy canes, or sprinkles. Enjoy!

Orange Belt Test

In December I took an orange belt test. It was in my Tae-Kwon-Do class. The order of the belts are 10 white, 10 gold, 9 orange, 8 green, 7 green, 6 blue, 5 blue, 4 purple, 3 brown, 2 brown, 1 brown, 1 black, 2 black, 3 black, 4 black, 5 black, 6 black, 7 black, 8 black, 9 black, and 10 black.

I had to do 5 kicks, 1 punch, 4 blocks, 6 sparring rounds, and 2 forms (a form is a lot of moves put together.)

We got to pick someone to spar each time. I sparred against 2 4th level black belts, a brown belt, 2 1st level black, and a 10 gold belt (that was boring, and I did not pick her!) I had to stay there from 6:30 p.m.-11:00 p.m.

Galaxy Attempt


Tuesday night, I got a text from a friend saying that there were supposed to be visible star clusters and galaxies that night. Also, the moon wasn’t rising for about 4 more hours. I was out at the time, but as soon as I got home, I took a look outside. I was shocked! The stars were incredible!

It took a few attempts for me to get a good picture, but my friend helped me trouble-shoot over the phone. It’s a little hard to see it outside of full-screen, but you can faintly see a galaxy in the picture below!

I didn’t stay out super long because of the cold. But I always enjoy getting out and admiring the stars! Nothing puts me in awe of God and how big He is than to look at the galaxies He has created!

Life Group


I apologize for the late blog posts this week. There haven’t been a whole lot of “blog-worthy” events going on! J

This past Monday night, we did host Life Group in our home. The group is much smaller this year than last year, but that’s kind of nice for a change.

We kids joined the adults for dinner! Mama made barbeque chicken for sandwiches, salad, chips and crackers with hummus, oranges, cookies, and Polar Express hot chocolate (recipe coming soon!)
We enjoyed chatting and visiting with the adults while we ate. Then it was time for the adults to do their Bible Study, so we kiddos did our school work in other parts of the house. It’s always a blessing to have church family in our home!

Saturday Evening Fun

This past Saturday, Ben and I went out with one of our Home-Away-From-Home Students, O. He doesn’t have a car, so he can’t get out and do much on the weekends. And since January is their super-light term, that gets a little boring. He really likes movies, so we looked at what was playing at the theater Saturday afternoon. We decided to go see “Saving Mr. Banks.”

Ben and I drove over to the college to pick him up. We got there a little early, so he showed us his dorm room. Then we headed off to the theater!

When we got there, we purchased our tickets, a few snacks, and went to our seats. I was quite happy, because we arrived early (I *hate* being late to a movie!) I wasn’t expecting to enjoy the movie that much, but it was actually pretty good. It talked a lot about the ways our childhood affects our adulthood.

The movie didn’t finish until almost 6:30 p.m. So we took O out for dinner at a new burger place in town. I had never been there before, but it was so good! I look forward to going back in the future.

Then we took O back to the college. It was a fun way to spend an afternoon/evening!

Movie Night with Friends


This past weekend we had a movie night with some friends! We had a similar movie night several months ago with the same friends, but we invited a few more this time.

Being a Friday night, we of course had to have pizza. J It was accompanied with popcorn, chips, veggies, cookies, and Tres Leches cake.

The movie we watched was light and silly, and not one that I’d probably watch again. But our purpose was really to just spend time with friends!

After the movie, we decided to play Dirty Power Uno. That game always proves interesting because it’s so complicated! We played a couple of rounds of that, and decided to move to the dining room table for a few rounds of Kemps.

Then a couple of us went to look at the stars and moon outside. Several of us have been learning about astrophotography, so we decided to do a little shoot.

It was pretty cold out! But I personally think taking pictures with friends is so much fun. J It was a great evening, and I’m so glad for the opportunity to host some friends in our home!

Recipe--Cheese Biscuits

Here is yet another recipe from our Thanksgiving table! These delicious biscuits remind us of the famous cheese biscuits at Red Lobster. They make a great accompaniment to a meal, especially soup!
 
Cheese Biscuits
 
 
2 cups baking mix (such as Bisquick)
2/3 cup milk
½ cup shredded cheddar cheese
¼ cup parmesan cheese
¼ cup butter
1 teaspoon dried parsley
½ teaspoon garlic salt
 
Preheat oven to 450°F. Stir together baking mix, milk and cheeses until soft dough forms. Drop by spoonfuls onto an ungreased cookie sheet. Bake for 10 to 20 minutes, or until bottoms are lightly browned. Melt butter, and add parsley flakes and garlic salt. Brush over warm biscuits. Makes 12-15 biscuits.

1 Year Ago

It’s been a whole year since Grandpa A went to heaven to be with Jesus forever. And that year went by quickly.
 
I remember the last time I saw him alive—Christmas 2012. The last song I sang with him—O Come All Ye Faithful--which is why I love the song so much. He seemed to know his time was coming—even though the rest of us didn’t know it. But he wasn’t afraid to die. He was ready.
 
But sometimes I don’t feel like I was ready for him to go. I can see myself pounding my fists right now. “It isn’t fair! I didn’t get to say goodbye! I don’t feel like I can even move on without him—I need him! I didn’t get a chance to tell him what a great Grandpa he was!”
 
But God knew his time had to come—even before Grandpa was born that October of 1927—that his day had to be January 17, 2013. I can only thank God for His sovereignty and that he chose Grandpa to belong to Him. I can only be thankful for the 13 almost 14 years I did spend with him. Many a time I wish my life could be over and I could just go be with him right now. But Grandpa would probably tell me that he wants me to keep going—to live my life, to the fullest.
 
He was a great husband, father, grandfather, patriarch, courageous leader, strong Christian, Koren War veteran, and lover of Jesus Christ. Humble and loving. A quiet southern man, who made a great impact on all of our lives.
 
 
 
I will always miss him.

More Photography Experiments


When I look through my January photo folder, it is full of experiments and artistic-type pictures! I’ve had lots of fun experimenting with long exposures since I got a digital remote for Christmas. I’ve also had fun experimenting in general with my camera and looking for more photo opportunities. Here’s a sampling from this month:

Saturday Afternoon Fun

This past Saturday, we had unseasonably high temperatures (up into the 60’s.) We couldn’t possibly let the day go by without going out and enjoying it!

Daddy suggested that we visit one of the parks nearby. He used to run there when he first moved to Texas, but the rest of us had never been there before. There’s a nice trail that’s about a mile long and goes around the lake. So it was time for a hike!

Thankfully the trails weren’t too muddy, despite all the rain we had last week. It was an absolutely perfect day for a hike!

One of the number one reasons people come to this park is because of the dam. The hill is so steep that people bring cardboard boxes and sled down it. We didn’t have boxes, but we did go running up and down the hill several times at the end of our hike.
After our hike, we went out for dinner! We had been given gift cards to Olive Garden. We hadn’t been there to eat since 2007, so it was a really nice treat! Our family always enjoys a good Italian meal. J

It was such a fun afternoon and evening! We always enjoy doing fun things together as a family. J

Family Fun Night


Our two home-away-from home students were gone almost the entire month of December on Christmas break. We missed them a lot, and were very excited for them to return in January.

So we had them over for our family pizza and movie night last Friday! We talked, laughed, and caught up with each other while I made the pizzas. Once Dad arrived from work, we piled into the den and watched “Gifted Hands” since both of our students are pre-med. J

After the movie finished, it was still fairly early in the evening. And since it was a Friday night, the guys didn’t have classes the next day, and had the freedom to stay later. J So we decided to play a game!

We introduced them to “Aggravation.” We had a lot of fun, and LOTS of laughs!
It was so good to have our “big brothers” back again, and we look forward to seeing them more often now!

Recipe--Scalloped Virginia Apples


Another recipe our family tried for Thanksgiving was Scalloped Virginia Apples. We had plenty of leftovers, and I almost liked them better that way! We put some in a bowl, warmed them up, and then topped them with vanilla ice cream. Quick and easy “apple pie!”

Scalloped Virginia Apples


4-6 large Virginia apples (Golden Delicious, Stayman)
¼ teaspoon allspice
1 ½ teaspoons lemon juice
½ cup water
1 Tablespoon fine bread crumbs (we omitted these)
2 Tablespoons granulated sugar
2 Tablespoons brown sugar
1 Tablespoon butter (we used more)
Sprinkle of nutmeg
1 teaspoon cinnamon

Preheat oven to 400°F. Put apples in a buttered shallow baking dish. Add water. Mix sugars and cinnamon. Sprinkle over apples along with lemon juice, bread crumbs, and nutmeg. Dot with butter. Bake about 45 minutes until apples are soft. Serve warm or cold. Serves 4 to 6.

Homeschool Blessings Part II: History

A couple of months ago, I decided it would be fun to share some of my favorite studies and courses within each subject of school. I had also previously shared about my gratitude for my parents’ decision to homeschool, and how I believe that in many ways it is a better alternative to public schooling.


In some ways, sometimes it is hard to pick up on school again after the holidays. But so far for me, it has felt good to get a fresh start! And of course here at home, we do have breaks sometimes, but your teacher and your resources are always there, so there’s not often much of an excuse to take a day off! J Maybe for those of us trying to keep up well though (like myself) this is a good thing.

Last time, I shared about many of the things I’m doing in the “Bible” category. Now I’d like to talk about history!

History was never my favorite subject growing up. I was never sure why. I feel now that it was just because I had a hard time remembering all the information and the dates. Neither did I really understand why studying the past was important. There were other subjects that I enjoyed more and was good at.

But this year History has turned into a subject I enjoy much more. I believe that it’s not about just learning from a certain time period and comparing it to how things look different today. Rather, by studying the lives of specific people, we can learn how to look at our own lives today, and hopefully even be prepared for the future. It’s a lot like the “glasses” we look through when reading the history in the Bible. We learn of, and from, people written in that time, based on situations they’d been through, sins they’d committed, and what they learned and wrote about to teach future generations about holy living. Sometimes there are even “bad” people we learn about, and we can learn the consequences of poor choices they made in their lives. At the same time, we can learn from the wisest people who ever lived, based on observations they made. I think that such history is used by God to teach us.

This year, I get a lot of history credit from different things, but my 2 main history subjects are: a book I’m going through with some of my siblings called “For You they Signed” by Marilyn Boyer, and a course from Milliken about American History. I’ve chosen to share some of my thoughts about the former.


In “For You they Signed” Boyer gives the spiritual heritage of each and every one of the signers of the Declaration of Independence! Not all of them were equally written of, as there were some I had never even heard of, along with those I knew quite a lot about. But what was amazing was that a spiritual heritage is written of each one of them.

Each chapter starts with an introduction about the signer’s name, where he was born and where he grew up, who his spouse and children were, how old he was when he signed and when he died, and so on. But along with that, there is a written character trait that best described them, along with a Bible verse which purposes to remind you of that person and his lifestyle. (An example below.)


I have learned that each signer was at great risk simply by putting his name down on that paper. Signing for the independence of their country was like signing their death sentence. But they were all willing, and boldly signed. Reading about them week after week has made me realize exactly the sacrifice that they gave for people in future generations like me. Many of their specific sacrifices are described in the book. I remember one which, for one of the men meant allowing his son to remain imprisoned and ultimately be killed by the British. Surely he wanted to save his son, and never even dreamed of allowing his decision to be what it was. However, his son was a bargaining chip for the British, and for the freedom of his country, he had to say what he did at the time.

According to what was written of these brave signers, they each possessed several godly character traits. And of many of them, it is said and gathered from information about their lives (or life-styles) that they were good fathers and husbands, godly examples, obviously courageous, loving and sensitive toward others, and many other things. And of course they all had weaknesses as well, but for many of them, it is taught that they learned good from their tough situations, and that they were turned around and used for good. (Or their weaknesses were even turned into their greatest strength.)

There is a lot to learn from these men of the past. “For You they Signed” is definitely a book I would recommend! I am going through it with Ben and Roma, and it includes questions to discuss that we use. It has been a very educational read for all of us!
