French Toast Casserole
1 loaf of sliced cinnamon bread
6 eggs
1 ½ cups milk
1 Tablespoon vanilla extract
½ Tablespoon cinnamon
¼ Cup sugar
Topping:
1 cup chopped pecans or walnuts
½ cup butter, melted
¾ cups brown sugar
Layer bread in a lightly greased 9 x 13 inch pan
(bread may overlap.) Mix together eggs, milk, vanilla extract, cinnamon, and
sugar. Pour over bread. Refrigerate overnight. The next morning, mix together
topping ingredients and sprinkle over the bread. Bake at 350°F for 40-45
minutes. Makes 8 generous servings. Enjoy!

when you said "so unhealthy" I was expecting something terribly rich! :) Really, this doesn't look too much more unhealthy than plain French Toast. The topping looks a little sugary, but it's a lot better than some sort of chemical syrup you could buy in the sore.:)
Make the cinnamon bread whole wheat, and this may not be such a bad breakfast. :-)
That is almost the exact recipe we use for our "Over-night French Toast"
except we use our home-made whole-wheat bread instead of cinnamon bread. Oh, and is that a frittata next to the French Toast in the picture? We have just started to make those and they are turning out really good! If you haven't tried one before you should! :)

You're probably right, Lydia. It's not all that different than regular french toast. Maybe it seems richer due to the amount of syrup I put on it. :-) I wish I had a loaf of your delicious whole wheat bread to make this recipe with!

I will have to try the recipe with homemade whole wheat bread, Alexis. That's actually not a frittata next to it; it's actually just scrambled eggs with herbs and cheese mixed in. I don't believe I've ever had a frittata before, but I may need to look it up!
