Recipe--Mocha Muffins


Every Wednesday night before church starts, we have a meal together. The themes vary each week. One week they were doing breakfast, and Mom pulled this recipe out of her “To Try” file. They were a big hit with everyone at church! Our worship Pastor loved them SO much that I made them again just for him the next week (even though that was the week without a refrigerator. That was interesting!)
 
These muffins are very quick and easy to make. They’re also quite good considering the fact that this girl doesn’t do coffee, but I still like them. J
 
Mocha Muffins
 

Muffins:
2 cups flour
¾ cup sugar
2 ½ teaspoons baking soda
1 teaspoon cinnamon
½ teaspoon salt
2 Tablespoons instant coffee
1 cup milk
½ cup butter, melted
1 egg
1 teaspoon vanilla
¾ cup mini chocolate chips
 
Cream Cheese Spread:
8 oz cream cheese
1 Tablespoon sugar
½ teaspoon vanilla
½ teaspoon instant coffee
¼ cup mini chocolate chips
 
For the muffins, mix together all the dry ingredients except the chocolate chips in a bowl. Mix the wet ingredients in a separate bowl. Add to the dry mix and stir. Add in chocolate chips. Spoon the batter into a greased mini-muffin pan. Bake for 15 minutes at 375°. Allow to cool in the pan for 5 minutes before removing.
 
For the cream cheese spread, combine all the ingredients together in the bowl of a stand mixer. Beat until well combined. Once the muffins have cooled, spread the cream cheese mixture on top. Makes approximately 4 dozen mini-muffins. Store any leftover spread or muffins with spread on them in the fridge.

I think those are called chocolate muffins, Daddy! :-) You should have had the hot chocolate I had last night; it was out of this world!
