Mortadella


Recently, I had another “meat endeavor” for school. Awhile back we had been given a 4 pound roll of mortadella for free. First, we had to look it up to see what it was and if it was already cooked. Mortadella is an Italian sausage and is a cold cut, so it was already completely cooked. It tastes a little bit like summer sausage for those of you who have had that before. Normally, mortadella is sliced thin and used in sandwiches as you would salami. But we had to improvise since 1) it had sugar and we are on a sugar fast right now, and 2) we could never slice it thin enough to use in sandwiches.

So instead. . .


. . .I cut it into ¼-½ inch slices. Then I peeled the outer skin off. . .



. . .cut it into small cubes. . .

. . .and packaged it up to freeze and be used in soups and in beans once we’re off our sugar fast! We’ve also thought of sprinkling it on pizza instead of using pepperoni.

So that’s how we saved on meat this month!

I hadn't heard of mortadella before.

We hadn't heard of mortadella either, Amy, until we found it in our freezer! :-) But we realized that we have been eating it in a lot of my Grandma's soups and beans. It is quite tasty and adds a hot/spicy flavor to the food!
