Over the summer, Rubia and Roma have been
making dinner on Thursday nights. Each time they have cooked, we have raved. J
They have found a lot of great new recipes to try from a book we have (and
love) called “5 Ingredients or Less.”
One recipe they tried recently was Tomato
Basil Pie. This recipe was the bomb! We all *loved* it! Even Josiah—the tomato-hating
person in this family—enjoyed the pie. It’s almost like eating Margherita pizza
in pie form. This recipe is quite simple, and definitely tasty. Give it a try
soon!
Tomato Basil Pie

8 oz. box buttermilk biscuit baking mix
1-2 tomatoes, sliced (we used more)
12 fresh basil leaves (we used more!)
6 oz. pkg. shredded asiago cheese (we just shredded
our own)
1 cup mayonnaise
Mix baking mix according to manufacturer’s
directions (ours was pretty sticky, so we added plenty of flour and kneaded it
in). Press dough into a greased 8” pie pan. Layer tomato slices and then basil
leaves on top of dough; set aside. Combine cheese and mayonnaise in a mixing
bowl; blend well. Spread cheese mixture over top, covering all tomato slices
and basil. Bake at 350 degrees for 30 to 40 minutes. Slice into wedges to
serve. Serves 4 to 6.
