Recipe--Grasshopper Pie

Back at Easter, I mentioned that we had Grasshopper Pie for dessert that Sunday. This has become a special holiday recipe for our family. It’s very refreshing and a great “springtime” pie! And no, it doesn’t contain any real grasshoppers in case you’re wondering. J (And yes, I have been asked that question before! J)

Grasshopper Pie


1 cup crushed fudge mint cookies (we use the Girl Scout Thin Mints cookies, but any comparable cookie would work)
3 Tablespoons of hot water
1 graham cracker pie crust
1 package (3 oz.) cream cheese, softened
1/3 cup sugar
2 Tablespoons milk
1/4 teaspoon peppermint extract
3 1/2 cups (8 oz.) Cool Whip
6-10 drops green food coloring

Mix crushed cookies and hot water. Spoon into crust and gently spread to cover bottom. In large bowl, beat cream cheese until smooth; gradually beat in sugar, milk, and peppermint extract. Fold in whipped topping. Stir in food coloring until evenly colored. Fill pie crust with whipped topping mixture. Smooth top of pie with spatula. Chill 3 hours. Serve cold. Optional: Drizzle top with chocolate syrup. Makes 1 pie. Enjoy!

You're welcome for the recipe, Lydia! I'm glad that you enjoyed the pie, although I don't remember which time it was that we had the pie while your family was here. But at least you had good memories of it! :-)
