Recipe--Old Fashioned Meatloaf

One of our favorite and most frugal dinners is meatloaf. Many times meatloaf gets a bad reputation for being bland and having a poor texture. Not so with my Mom’s recipe! We enjoy adding fresh herbs such as rosemary for a really nice flavor. Give it a try this week! It’s very simple!

Old Fashioned Meatloaf


Sorry the picture isn’t very good. Though this meatloaf is very tasty, it’s hard to make it look good in a picture!

3 1-oz slices of bread torn into small pieces
¼ cup milk
1 ¼ pounds ground beef
2 eggs, lightly beaten
¼ cup ketchup
¼ cup finely chopped onion
2 tablespoons finely chopped fresh parsley
1 garlic clove, minced
½ teaspoon salt
¼ teaspoon dry mustard
¼ teaspoon freshly ground black pepper
Rosemary to taste (optional)

Preheat oven to 350°F. In a large bowl, soak bread in milk for 5 minutes. Add remaining ingredients; mix gently. Shape into 8x5x1 ½” loaf pan; place on rack in pan. Bake 50-60 minutes. Enjoy!
