Recipe--Caramel Pecan Apple Pie


While apples are still in season, I thought I should post the pie recipe that won second place at our friends’ harvest party. It was the second time we’ve made this pie—the first time I’d made it, though—and it turned out very good. We originally found this recipe on our friend Sarah’s blog, and we will definitely be making it again! Here is the recipe:

Caramel Pecan Apple Pie


1 9-inch pie crust (see recipe below)
½ cup sugar
1/6 cup flour
1 teaspoon cinnamon
1/8 teaspoon salt
6 cups thinly sliced and peeled apples (about 5 apples) Note: We used Honey Crisp and Sweet Tango because that’s what we had on hand.
TOPPING:
½ cup packed brown sugar
¼ cup flour
¼ cup oats
¼ cup cold butter
½ cup chopped pecans
¼ cup caramel ice cream topping (optional but recommended J)

Line 9-inch pie plate with crust. Trim and flute edges; set aside. In a large bowl, combine sugar, flour, cinnamon and salt; add apples and toss to coat.

Pour into crust.
For topping, combine brown sugar, flour, and oats; cut in butter until crumbly. Sprinkle over the apples. Sprinkle chopped pecans over apples and topping.
If you have extra pie crust, you could cut a cute little shape to put on top as a decoration!
Cover edges loosely with foil. Bake at 375°F for 25 minutes. Remove foil; bake 25-30 minutes longer or until filling is bubbly. Once cooled, drizzle with caramel topping.
Makes 1 pie (6-8 servings) Enjoy!

 Whole Wheat Pie Crust

1 ¾ cups whole wheat flour or whole wheat pastry flour
½ teaspoon salt
½ cup cold butter, cut up in pieces
3 to 4 Tablespoons ice water

Blend dry ingredients. With pastry blender cut in butter until mixture is crumbly and the size of large peas. Make a well in the center of the mixture and add water. Stir in water with a fork just until evenly mixed in (will still be crumbly.) Gather dough together and shape into a ball with the palms of your hands, but handle the dough as little as possible. Pat out slightly on wax paper. Place another piece of wax paper over the top and roll the dough out. Place in pie pan. Makes 1 (single) pie crust.

*To be perfectly honest, I wasn’t really thrilled with my pie crust. But that may have to do with the fact that I had never made pie crust before and whole wheat flour in crust takes some getting used to.*
