Recipe--Coffee Cake


A very special treat around our house is coffee cake. After not making it for a very long time, we had it on Easter Sunday. It was just as delicious as I remember! I hope that you like this easy recipe as much as we do! (Thanks to our good friend Miss Jody for giving this recipe to Mom many years ago!)

Coffee Cake


1 ½ cups flour
½ cup brown sugar
1/3 cup sugar
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon ginger
½ cup oil

2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 egg, well beaten
½ cup sour cream

Preheat oven to 350°F. Stir together flour, sugars, and spices. Blend in oil. Set aside ½ cup of this mixture. To the remaining mixture, add remaining ingredients. Mix well and spread in greased 8x8x2 inch baking pan (we double the recipe and use a 9x13 inch pan). Sprinkle the ½ cup of reserved mixture on the batter. Bake 30 minutes or until done. Enjoy!

Your Mom gave shared this recipe with us years ago and it is now a family favorite. Tyler asked me to make this last Sunday. Before checking supplies I said, "sure, that would be yummy." Of course when I went to make it we had no sour cream, but, we did have greek lemon yogurt. I used it in place of the sour cream. It worked great an no one noticed :D

Thanks for your tip on substituting yogurt for the sour cream, Aunt Debbie! I will have to keep that in mind, as we always have greek yogurt around the house these days. Dad likes to have a greek yogurt for lunch every day, so we have lots of flavors to choose from! :-)

I'm also glad to hear that you enjoy the recipe. It is really good!
