Recipe--Stuffed Meatloaf Balls

Some of you may remember me posting about these stuffed meatloaf balls as part of our Superbowl menu. These make a great appetizer, and are great to serve to a large crowd. Or make enough for everyone to have 2 or 3 for dinner one night. Either way, these are really good!

*Note: We doubled this recipe for Superbowl. I wouldn’t want any of you to be confused and wonder why the recipe made 12, but we pictured so many!*

Stuffed Meatloaf Balls



1 egg, beaten
¾ cups milk
½ cup quick cooking oats, uncooked (we just use rolled oats and blend them in the food processor to make them finer)
1 teaspoon salt
1 lb. lean ground beef or ground turkey (we like to season ours before adding it)
12 cubes (¾ inches thick, each) cheddar cheese
2/3 cups ketchup
¼ cup light brown sugar, packed

Preheat oven to 350°F. Grease 12-cup muffin pan. Combine the beaten egg, milk, uncooked oats and salt in a large bowl. Add the ground beef or turkey, mixing well. Divide mixture into 12 equal portions. Insert one cheese cube into center of meat and roll in hands to form the meat into a ball around the cheese.

Place into muffin tin and continue with remaining meat and cheese.
Combine the ketchup and brown sugar in a separate small bowl. Stir thoroughly and spread over each mini meatloaf. Bake uncovered on center oven rack for 30 minutes or until done. Refrigerate any leftovers. Makes 12 balls. Serve hot. Enjoy!

I love meatballs and made it for the first time couple weeks ago out of a Pioneer's Woman cookbook and love it. The only thing I found it hard is to do over the stove for a long time to make a lot of meatballs. That's a great idea to put in a muffin pans and put it in the oven. I will definitely try that next time. You added cheese on yours? I LOVE cheese. I will have to try out your recipe the next time I feel like making meatballs.

I hope you get a chance to try this recipe, Leah! We don't usually have meatballs because of all the work involved, so these were great because they were easy and quite substantial. Let us know how you like the recipe if you get a chance to try it!
