Recipe--Fresh Peach Pie


I feel guilty posting dessert recipes 3 weeks in a row, but there are so many desserts that we only enjoy once or twice a year, while the fruit is in season! At least if they have fruit in them, they’re somewhat healthier, right? Sure! J

Yet another peach recipe we enjoy is this refreshing peach pie. At the end of a hot day of work, this pie makes a very good reward!

Fresh Peach Pie


2 pie crusts, baked and cooled (we used deep-dish)
8 oz cream cheese
2 Tablespoons powdered sugar
2 Tablespoons milk
2 cups whipped cream
2 cups water
1 ¾ cups sugar
1/4 teaspoon salt
5 Tablespoons cornstarch
1 box peach jello (3 oz)
4 cups of sliced peaches

Chill peaches in the refrigerator. Don’t cut up until ready to mix with filling. Mix together cream cheese, powdered sugar, and milk until smooth. Add whipped cream; beat until smooth. Spread into bottom of your cooled pie crust. Put in refrigerator.

Cook water, sugar, salt, and cornstarch until thick, clear, and smooth. Add peach jello and stir well. Let this mixture get cold in the refrigerator.

Peel and cut peaches (slice) and add to cold filling. Spread on top of cream cheese mixture. Put back into refrigerator until firm.

Top with whipped cream and enjoy! Makes 2 pies.

*You can use strawberries with strawberry jello or any other kind of fresh fruit.*
